Chef Kathy Cary of Lilly's Bistro

I had the honor of interviewing the talented Chef Kathy Cary in a phone interview, as my fifth interview. Katherine Nash Cary was born in Louisville, Ky, and lived in Washington D.C. for three years. Chef Cary first learned cuisine from her grandmother, who was a great cook, and learned from watching her grandmother, paying attention to the caterers in Louisville, and reading magazines. Chef Cary is from English and Irish background but tells me that while she loves both countries, they don't tie directly into her cooking practices or lifestyle decisions. Chef Cary taught her first cooking class when she was 16, and has since traveled the world and created recipes for her restaurant, Lilly's Bistro. Cary tells me that she doesn't have a favorite cuisine but loved traveling to Barcelona, and recalls having some of the best food in Spain in regards to the local flavor and all the seasonings. Chef Cary tells me, "While I travel, I like to keep my palette open and experience what they (the locals) recommend, and then create recipes with what we have here in town." Chef Cary's favorite dish to create is her Shrimp Capellini, and I have a recipe for her Grilled Chicken Salad with Spring Veggies that I will include in my cookbook.
